Everyone knows that eating vegetables is good for you. And pretty much everyone knows which nutrients are contained in which veggies. Here are a few additional reasons why you should be eating your carrots, eggplant, cucumbers, lettuce, and more.

Did you know that eating an eggplant’s peelings can fight against both cancer and aging? The next time you chop a whole eggplant up for roasting or for including in a casserole or salad, be sure to leave those peelings on.

 

Did you know that tomatoes can help to lower your risk of developing cancer? To eat, even more, throw a can of cubed tomatoes in with your favorite canned spaghetti sauce. Slice a few to have on hand for eating on sandwiches. Always cut one up when making a salad.

Did you know that carrots help the body to maintain its connective tissue? And that they are imperative for the maintenance of healthy teeth and gums? Munch on raw carrots and add some to soups and stews for an extra punch. Puree some carrots and add them to chili or spaghetti sauce. You will know you’ve done something positive for your family’s health and they won’t even know you’ve added an extra source of vegetables to their food.

Did you know that if you’re constipated that cucumbers can help? The next time you need to–well, you know–but can’t–add a few slices to whatever you’re eating and you will likely see positive results.
